Dining / Amazing taste of Cantonese

I don’t get to this elegant restaurant often enough. I was delighted when friends booked for the Chairman’s Dinner Special (available until October 30).

This is one of the best “meal deals” in town, especially given the quality of the food, the relaxing ambience and the knowledgeable, attentive service.

The special is $45 for five courses (food only) or $50 with a glass of house wine. This is amazing Cantonese cuisine.

The dinner was off to a smashing start with the calamari tossed with spicy salt and chilli. It’s one of those dishes you dream about, and crave. The calamari was beautifully tender and balanced – not too salty or too spicy, but enough to make you want more, and then more.

The steamed pork dumplings with ginger and black rice vinegar were top-notch. Chairman & Yip creates sui mai exceptionally well.

Next up was the Cape Grim eye fillet beef skewers with citrus and herbs. One sign of a great restaurant is the quality of its produce, and Chairman & Yip never compromises here. This beef is heralded as some of Australia’s finest and, once again, the combination of flavours were superb.

I would say the sesame-crusted salmon with cinnamon-infused soy dressing is a signature dish, and a stunning way to present this fish. The crusty coat protects the juicy interior and the soy dressing is light so as not to interfere with the more delicate taste of the salmon.

To top off the dinner special, we were served the Portuguese-spiced, grain-fed chicken with roasted paprika and chorizo. This was the only dish we didn’t salivate over. We couldn’t get our heads around the Portuguese influence or combination of flavours. Oh, well. Four out of five is a darn good score.

The Chairman & Yip is part of the The Chairman Group, which also operates Lantern Rooms at Campbell Shops (Nyonya cuisine), Malamay (fine Hong Kong dining, Michelin star 2012) and LiloTang (Japanese cuisine), both in the Burbury Hotel.

Since opening in 1992, The Chairman & Yip has won numerous awards and is a highly regarded institution in the capital. The wine list is stellar, as it is at all The Chairman Group restaurants.

And the name? I’ve heard it’s the tale of a famous drag queen in Hong Kong named Madame Yip who had a relationship with The Chairman, an underground casino owner. You can take it from there…
